Job Description

JOB PURPOSE

Primary responsibility is the implementation and adherence to the Company’s HACCP program, procedures and activities in a fresh pork processing facility harvesting over 20,000 animals per day. Monitors all stages of the production process to ensure compliance with all Company, regulatory, Safe Quality Food Standards (SQF) and to supply a product safe for consumption. Works directly with and collaborates with operations and the engineering departments to solve problems to minimize the disruption of production. Completes a daily review of required regulatory documentation, including HACCP, SSOPs, SPSs and pre-requisite programs facilitating corrective action plans for program deviations assuring corrective action meets regulatory and Company requirements.

RESPONSIBILITIES & TASKS

  • Maintain accurate records to assure consistency of product quality, compliance to regulatory agency requirements and documentation of Hazard Analysis and Critical Control Points (HACCP) program.
  • Complete understanding of the Company’s food safety programs
  • Proactively verify and validate documentation of current food safety programs related to all aspects of the facility including Hazard Analysis Critical Control Point (HACCP) programs, Animal Welfare Program, Sanitation Standard Operation Procedures (SSOP’s), and Sanitation Performance Standards (SPS).
  • Complete and thorough understanding of new and current federal, state, and local regulations that affect food safety requirements associated with manufacturing, processing and packing, distribution etc., (HACCP, SSOPs, GMP’s).
  • Review and examine all facets of the food safety and quality assurance systems ensuring USDA regulatory requirements are met.
  • Ensures the food safety and humane handling system documentation are properly recorded and posted to ensure regulatory and customer compliance for production of high quality, safe, and wholesome products.
  • Support FSQA needs with regards overnight sanitation, overtime reduction, pre-operational inspections & data collection.
  • Assumes responsibilities for other shifts if necessary.

REQUIREMENTS 

  • Bachelor’s or associate degree in a science related field is preferred. At a minimum, a high school diploma or GED is required.
  • One or more years of experience in the protein industry or closely related field is required.
  • Ability to read and interpret documents in the English language such as safety rules, operating and maintenance instructions, and procedure manuals.
  • Ability to write routine reports and correspondence.
  • Ability to effectively present information before groups of customers or employees of the organization.
  • English is required and bilingual skills in Spanish preferred. 

PHYSICAL DEMANDS: The employee must regularly lift and/or move up to 50 pounds, occasionally lift to 100 pounds and sometimes push/and or move up to 300 pounds. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.

WORK ENVIRONMENT: While performing the duties of this job, the employee occasionally works near moving mechanical parts and is commonly exposed to airborne particles and gases at low concentrations. The temperature of the work environment ranges from 30 degrees to over 90 degrees at certain times of the year. The employee could be exposed to animal waste material, blood, and odors.
