Position Function:

Apply a broad knowledge of scientific principles, practices, and procedures to plan, coordinate, conduct research and publish findings. This is a 1-year position.

The incumbent for this postdoctoral research position will work on soymilk emulsion stability

enhancement, and particularly will engage in the investigation of how soy protein-lipid-carbohydrate interacts in the soymilk during processing and storage, and how it would affect flavor properties. This is a USDA-NIFA funded project.

Department Profile:

Coastal Research and Extension Center serves as Mississippi State University's "southern exposure". This position is located in Pascagoula, MS at our Experimental Seafood Processing Lab. Interviews will be conducted in Pascagoula, MS.

Our Research Laboratory has about 6,000 square ft of research space, including a wide array of food processing, chemistry, and analytical equipment. We have a wide array of analytical equipment and facilities. Examples include DSC, Circular Dichroism, GC-MS-Olfactory, LC-MS/MS, ICP-MS, HPLC, FT-IR, NIR, amino acid analyzer, Anton-Paar rheometer, other viscosity and texture analyzers, various electrophoresis and imaging instruments, molecular device multi-mode plate reader, and many other instruments for productive research. We also have two cold rooms for chromatography and shelf-life study.

We have strong collaborations with the USDA-ARS-Southern Regional Research Center in New Orleans and neighboring universities in the Northern Gulf region.

Essential Duties and Responsibilities:

1.Conduct research to characterize how protein-lipid-carbohydrate interacts as affected by processing and storage. The objective is to enhance soymilk stability by using homogenization and hydrocolloids.

2.Design, perform and document experiments accurately, organize and analyze data using statistical methods, interpret data and prepare manuscripts for publications.

3.Perform miscellaneous duties as assigned.

Minimum Qualifications:

Ph.D. degree in food science, chemistry or related disciplines. Experience in protein fractionation and separation using column chromatography, electrophoresis, enzyme techniques, protein characterization.

Preferred Qualifications:

Experience in LC-MS, NMR, IR analyses.

Knowledge, Skills, and Abilities:

1.Knowledge of scientific principles and methodologies in food science or chemistry.

2.Ability to design, organize, and coordinate scientific research projects, analyze data and to prepare manuscripts and research grant proposals.

3.Ability to work effectively as a team member of a group of scientists and students with a diverse cultural background.

4.Effective written and verbal communication skills.

Working Conditions and Physical Effort

  • Work is normally performed in a typical interior/office work environment, research laboratory and processing plant.
  • Considerable physical activity. Requires heavy physical work; heavy lifting, pushing, or pulling required of objects up to 50 pounds.
  • Work environment involves some exposure to hazards or physical risks, which require following basic safety precautions according university policies.
