Under the direction of the Supervisor, Facilities, the Kitchen Mechanic is responsible for repairing, maintaining, troubleshooting, and conducting preventative maintenance for all kitchen food equipment. Performs skilled work in the installation, repair and maintenance of large and small commercial food processing, preparation, cooking, handling, storage and related equipment and appliances. Communicates all repair needs and maintains repair and maintenance records for equipment.

ESSENTIAL DUTIES AND RESPONSIBILITIES

1. Repairs and conducts preventative maintenance programs on kitchen and bar equipment including but not limited to sinks, faucets, floor drains, dishwashers, stoves, ranges, cheese melters, fryers, induction burners, toasters, smokers, conventional ovens, broilers, hotwells, griddles, food prep tables, steam tables, etc. Coordinates large installs to repair, adjust, dissemble, replace, and reassemble commercial kitchen equipment (i.e. replacing motors, belts, bearings, electrical components such as circuit boards, contractors, modules, defrost timers, fuses, capacitors, thermostats, etc.). Maintains kitchen hoods and exhaust systems. Demonstrates effective troubleshooting and problem-solving techniques with the ability to perform on-site design modifications as appropriate per factory specifications.

2. Maintains kitchen food service equipment inventory and related records of frequently used parts, equipment and supplies and generates requisitions for replenishment.

3. Inspects and tests equipment and systems to ensure proper functioning. Receives and completes service orders and completes preventative maintenance records on all equipment. Writes repair service order tickets and out of order tags preparatory to equipment repair. Dismantles malfunctioning systems and test components, using electrical, mechanical, and pneumatic testing equipment.

4. Coordinates with kitchen operations staff on deep cleaning of equipment (i.e., deep fryers, griddles, and char grills) to detect excessive noise and heat and grease motors and bearings. Examines appliances during operating cycle to detect excess vibration, overheating, fluid leaks, and loose parts. Utilizes a variety of power equipment, test equipment and hand tools.

5. Collaborates with departments, vendors, general contractors, and sub-contractors when completing projects and/or tasks.

6. Performs other duties as assigned to support the efficient operation of the department.

EDUCATION, EXPERIENCE AND QUALIFICATIONS

  • High School Diploma or GED required.
  • Minimum two (2) years’ experience as a Kitchen Mechanic, with strong mechanical and electrical skills. required.

KNOWLEDGE, SKILLS AND ABILITIES (KSA)

  • Familiar with ASHRAE standards or general knowledge of kitchen code requirements.
  • Must be able to work on call for after-hour emergencies.
  • Ability to read and understand blueprints, as-builts, and schematics.
  • Ability to follow safety guidelines when using required equipment, tools, and techniques while performing job duties.
  • Ability to use manufacturer interface software to navigate and investigate electronic control interfaces.
  • Knowledge in working with FRP, stainless panels and drywall, and keeps all chemicals in assigned areas with proper labels (SDS) and proficient with control circuit wiring, solid state circuitry, gas safeties and controls and monitors equipment for safety and efficiency of operations.
  • Knowledge and ability to operate hand-held and power equipment and tools. Must possess personal set of tools.
  • Ability to read and understand blueprints, as-builts, and schematics.
  • Knowledge of emergency shut-off procedures for gas, water, electrical, etc.; domestic and water systems including an understanding of fluid motion, pumps, motors, and plumbing.
  • Ability to follow safety guidelines when using required equipment, tools, and techniques while performing job duties.
  • Ability to use manufacturer interface software to navigate and investigate electrical control interfaces.
  • Knowledge in working with Fiberglass Reinforced Plastic (FRP), stainless panels, and drywall, and keeps all chemicals in assigned areas with proper labels; follow Safety Data Sheets (SDS) for all chemicals.
  • Knowledgeable and proficient with central circuit wiring, solid state circuitry, gas safety and controls and monitors equipment for safety and efficiency of operations.
  • Knowledge of food service equipment and ability to work on a wide variety of commercial/industrial grade food service equipment.
  • Ability to operate computer and proficient in Microsoft Word, Excel, and Outllok applications.
  • Ability to work independently and as a member of a team and communicate effectively in person and in writing.
  • Possess strong organizational skills and ability to multitask effectively.

LICENSES, CERTIFICATIONS AND REGISTRATIONS

  • At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
  • Heating, Ventilation, and Air Conditioning (HVAC) Technician Training Accredited Program and Environmental Protection Agency (EPA) certification.
  • Authorized Driver: Role requires operation or driving of Tribe-owned vehicles or driving patron vehicles. A valid driver’s license with an acceptable driving record as determined by the insurance carrier is required.

  • Strength sufficient to exert up to 10 pounds of force occasionally and/or a negligible amount of force frequently or constantly to lift, carry, push, pull or otherwise move objects and/or move up to 40 pounds occasionally.
  • Sedentary work: may involve sitting some of the time. May operate a computer and other office productivity machinery, such as a calculator, copy machine, and computer printer.
  • Physical activities that apply to the essential functions of the position are balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, and repetitive motions.
  • Hearing sufficient to hear conversational levels in person, via videoconference and over the telephone.
  • Speech sufficient to make oneself heard and understood in person, in front of groups, in meetings, via videoconference and over the telephone.
  • Visual acuity that meets the requirements of the position: The worker is required to have close visual acuity to perform an activity such as preparing and analyzing data and figures; transcribing; viewing a computer terminal; expansive reading and visual inspection of employees, visitors or facility.
  • Mobility sufficient to safely move in an office environment, walk, stoop, bend and kneel, and enter, exit and operate a motor vehicle in the course of travel to promotional events, meetings, conferences, trade shows and San Manuel properties.
  • Endurance sufficient to sit, walk and stand for extended periods, and maintain efficiency throughout the entire work shift and during extended work hours.
  • The employee may be exposed to fumes or airborne particles including secondhand smoke.
