Under the direction of the Supervising Correctional Cook, plan, organize, supervise, and assist in the preparation, cooking, and serving of food; supervise the maintenance of culinary equipment, supplies, and work; instruct and enforce proper safety standards; maintain order and supervise the conduct of inmates; protect and maintain the safety of persons and property; other work as required. Supervise inmates in the preparation of cooking and serving of food; enforce sanitation policies and procedures for equipment and food preparation areas; instruct and enforce proper safety standards; maintain order and supervise the conduct of inmates; protect and maintain the safety of persons and property; do other work as required. Receive various vendor items, responsible for storage of all goods; rotation of stock, taking of inventory and making dry store and paper supply orders. Maintain accurate records of timecards and monthly reports for all assigned inmates, inmate training. All other duties as required.

Working Conditions

California Correctional Institution is located in the Tehachapi Mountains approximately 325 miles south of Sacramento and approximately 120 miles north of Los Angeles.

CCI is a Multi-level, Sensitive Needs Yard, facility consisting of four (4) facilities, encompassed within a campus style layout with varied terrain. Work in this location may require exposure to varied temperatures dependent upon the season.
