Food Service Manager (Back Office)

Location: U.S. House of Representatives Dining Services

Location: Washington DC

This position REQUIRES a Culinarian (Chef, Sous Chef, Kitchen Manager), which exceptional administrative skills to manage the back office in a very busy, multi-outlet Capitol Dining setting.

Our Back Office Manager will primarily be responsible for the administrative functions including, payroll, scheduling, ordering, and inventory, but must be willing to roll up the sleeves and put on the Chef hat as needed.

This role offers an excellent Monday–Friday daytime schedule, focusing on breakfast and lunch service—providing work-life balance within a fast-paced, professional environment.

Core Responsibilities:

The Back Office Manager will oversee and be accountable for the full scope of food service operations, including:

  • Staffing & Leadership: Recruit, schedule, train, and develop hourly team members and supervisors. Foster a strong culture of accountability, service, and hospitality.
  • Customer Service: Ensure consistently high levels of guest satisfaction through responsive service, food quality, and a welcoming dining experience.
  • Food Production Oversight: Collaborate with culinary leaders to ensure smooth food production, menu execution, and quality presentation across all platforms (salad bar, grill, deli, pizza, sushi, desserts, grab-and-go, beverages, and branded concepts).
  • Ordering & Inventory Management: Oversee all ordering of food, supplies, and equipment; maintain proper inventory levels and ensure cost-effective purchasing in compliance with company and client expectations.
  • Food Safety & Sanitation: Enforce rigorous adherence to food safety protocols (HACCP, ServSafe), sanitation standards, and health department regulations.
  • Employee Safety & Compliance: Maintain a safe work environment, conducting regular safety audits and ensuring compliance with OSHA and internal safety guidelines.
  • Financial Controls: Monitor and manage food and labor costs, develop action plans to control expenses, and ensure budget adherence.
  • Brand Management: Work closely with national brand partners to ensure compliance with brand standards, training, and promotional initiatives.
  • Reporting & Administration: Assist with payroll, vendor invoicing, P&L analysis, and internal reporting.
  • Client Relations: Serve as a point of contact for on-site client needs, ensuring alignment with expectations and contract terms.

Metz Culinary Management is growing and we have an exciting opportunity for an experienced Assistant Manager in a busy commercial kitchen and operations setting. We are seeking an individual with high energy, a polished and professional identity and winning attitude FOH and BOH operations. Experience desired in a Contract Dining Food Service setting such as Hospital, School, College, Senior Living or Corporate Dining accounts. Culinary background is a strong plus!

The Manager and Supervisor shares an overall responsibility of food service. He/she institutes company cycle menus and recipes; plans and oversees operations, purchasing, employee personnel programs, scheduling, bookkeeping, and customer and client relations; directs through supervision food preparation service and sanitation; and is accountable for the total operation results.
