Under the direction of the Manager, Beverage, the Assistant Manager, Beverage oversees beverage service operations throughout Yaamava Resort & Casino with a focus on exceptional customer experience and operational excellence in all areas. This role plays a critical role in shaping and guiding safety and sanitation policies and procedures for all relevant inspections, while also overseeing the planning, development, and implementation of comprehensive training programs to ensure an efficient and effective beverage operation. This role collaborates with multiple departments to educate, influence, and support initiatives by providing subject matter expertise that informs business decisions. Additionally, this position actively partners with other functions to identify and support opportunities, championing the goals and priorities of the enterprise in a manner that consistently reflects and upholds the Tribe’s vision, mission, and values.

ESSENTIAL DUTIES AND RESPONSIBILITIES

1. Leads all aspects of the Beverage department to include exceptional guest service, efficient and accurate beverage service, cleanliness and operational excellence. Is responsible for effectively managing day-to-day operations in alignment with departmental and enterprise-wide policies and procedures, maintaining high standards of performance and service quality.

2. Ensures the safety and security of all team members working in beverage areas by verifying adherence to all policies, procedures and regulatory standards. Monitors loss time injuries and implements programs/processes to reduce loss time when appropriate. Collaborates with Risk Management and Compliance teams to advise on operational matters regarding safety programs affecting conditions and the wellbeing of guests, team members, and Tribal Citizens.

3. Monitors and maintains sanitation standards across all beverage venues to ensure a safe and healthy work environment in full compliance with Enterprise policies, procedures, and quality service standards. Possesses and applies thorough knowledge of departmental chemicals and electrical equipment to ensure proper usage and safety protocols are consistently followed.

4. Is responsible for the overall development and implementation of all training to support efficient beverage operations. This includes assessing operational needs, improving training programs and ensuring that all team members are equipped with the knowledge and skills necessary to uphold service excellence, safety standards, and operational best practices.

5. Utilizes data-driven information to make informed recommendations and ensure effective inventory control, including monitoring usage patterns and fluctuations to maintain appropriate stock levels while minimizing waste. Oversees timely and accurate ordering of replacement inventory to prevent overstocking and control replacement costs. Assesses and determines the necessary materials, equipment, and facilities required to support operations, and ensures all beverage orders are placed accurately and in a timely manner.

6. Identifies, recommends, and implements innovative solutions to enhance organizational efficiency, with a strong emphasis on delivering exceptional guest service, maximizing productivity, ensuring quality and safety, and achieving cost savings.

7. Ensures all beverage products are served promptly and in full compliance with established service standards and Health Department regulations, while also verifying proper pour testing and strict adherence to recipes by all bar staff.

8. Executes thorough knowledge of local, state and federal regulations for the sale and distribution of alcohol and cigarettes, as well as a thorough understanding of all San Manuel Tribal Gaming Commission Regulations and the California Department of Alcohol Beverage Control standards.

9. Performs other duties as assigned to support the efficient operation of the department.

SUPERVISORY RESPONSIBILITIES

Carries out supervisory responsibilities in accordance with the organization’s policies and applicable laws. Responsibilities include interviewing, hiring and training employees; planning, assigning reviewing and directing work; evaluating and appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Makes hiring decisions and designs individual development plans with succession planning in mind for all key roles.

EDUCATION, EXPERIENCE AND QUALIFICATIONS

  • Bachelor’s Degree in Hospitality, Business Management, or related field required.
  • Minimum three (3) years of food and beverage service in a high-volume bar, restaurant and/or gaming environment required.
  • Minimum two (2) years of supervisory experience preferred.
  • Related, relevant, and/or direct experience may be considered in lieu of minimum educational requirements indicated above.

KNOWLEDGE, SKILLS AND ABILITIES (KSA)

  • Proficiency in Microsoft Office (Word, Excel, and Outlook) preferred.
  • Must be able to read, write and communicate in the English language.
  • Must possess strong leadership and people management skills with the ability to successfully collaborate with and motivate others.
  • Must be able to have clear and effective communication with guests and team members.
  • Must be able to communicate change effectively, overcome resistance and build commitment.
  • Must be personable and professional, capable of using caution and discretion in communication.

  • Must maintain a strict level of confidentiality and act in a manner consistent with all legal and regulatory requirements and in compliance with relevant laws and regulations.

LICENSES, CERTIFICATIONS AND REGISTRATIONS

  • At the discretion of the San Manuel Tribal Gaming Commission, you may be required to obtain and maintain a gaming license.
  • Must obtain and maintain a current Food Handler’s Card.
  • Must obtain and maintain a ServSafe certification.
  • Must obtain and maintain a Responsible Beverage Service (RBS) certification.
  • No Driving Responsibilities: Role does not require a driver’s license or insurance.

  • Primary work environment is in a climate-controlled Casino & Resort setting.
  • Work requires travel to attend meetings, trade shows, and conferences.

  • Hearing sufficient to hear conversational levels in person, via videoconference and over the telephone.
  • Speech sufficient to make oneself heard and understood in person, in front of groups, in meetings, via videoconference and over the telephone.
  • Visual acuity that meets the requirements of the position: The worker is required to have close visual acuity to perform an activity such as preparing and analyzing data and figures; transcribing; viewing a computer terminal; expansive reading and visual inspection of employees, visitors or facility.
  • Mobility sufficient to safely move in an office environment, walk, stoop, bend and kneel, and enter, exit and operate a motor vehicle in the course of travel to promotional events, meetings, conferences, trade shows and San Manuel properties.
  • Endurance sufficient to sit, walk and stand for extended periods, and maintain efficiency throughout the entire work shift and during extended work hours.
