About the role
The Four Seasons Resort Maui is looking for a Sushi Chef. Candidates with a passion for excellence, expertise in hospitality operations and proven leadership experience are invited to apply for a career with Four Seasons. As a member of the Maui Culinary team, the Sushi Chef works across disciplines to deliver an exceptional experience. Work authorization for this location is required.
What you will do
The Sushi Chef holds a management position within the kitchen department, reporting to the Executive Sous Chef. We are looking for an individual who is passionate about cuisine! Attention to detail and a strong work ethic are required in this position. The Sushi Chef is responsible for planning, organizing, controlling, directing and executing food preparation, while ensuring superior quality and consistency. Candidates should have three to five years' previous experience in sushi focused restaurants with an emphasis on Japanese Cuisine.
This position is guest facing, with frequent guest interaction & engagement. Meticulous food safety, grooming and personal hygiene practices are required.
What you bring
High School education or equivalent experience.
3+ years of experience as a Head Sushi Chef
4-6 Years of experience in high-end restaurants/luxury hotel hotels
Comprehensive experience in high-end Asian cuisine, & Sushi Omakase concepts
Thorough knowledge of various sushi types and sushi-rolling techniques
Excellent knife skills. Proficient skills in rice preparations, seafood fabrication
Ability to work both quickly and accurately
Strong organizational skills, analytical, problem-solving and project management skills
Excellent communication skills
Serve Safe Manager Certification or equivalent
