Job Summary

The Culinary Operations Manager is a highly skilled and experienced culinary professional responsible for overseeing multiple school district food service operations. With a keen eye for culinary excellence, they design and execute strategies to ensure consistent quality, nutrition, and creativity across menus and food offerings. Their leadership extends beyond the kitchen as they develop and implement comprehensive culinary training programs, fostering a culture of innovation and continuous improvement among both senior leadership and front-line staff.

Responsibilities

  • Implement quality control measures to ensure the consistency, safety, and quality of food preparation, storage, and service, conducting regular inspections and audits of kitchen facilities and processes.
  • Develop and execute culinary strategies and standards for multiple district locations.
  • Supervise and mentor the Purchasing Manager to ensure efficient and cost-effective procurement of ingredients and supplies.
  • Collaborate with the Dietitian to create nutritionally balanced and appealing menus that meet dietary guidelines and customer preferences.
  • Lead the Catering Chef, providing guidance and support in menu planning, recipe development, and food preparation techniques.
  • Design and implement comprehensive culinary training programs
  • Develop training modules and materials to provide front-line staff with consistent culinary training, ensuring high-quality food preparation and presentation.
  • Conduct regular evaluations and assessments of culinary operations in each district location, identifying areas for improvement and implementing corrective actions as necessary.
  • Stay updated with industry trends, new culinary techniques, and emerging ingredients to introduce innovative and creative menu items.
  • Collaborate with the Purchasing Manager to establish relationships with local vendors and suppliers, ensuring the availability of fresh and high-quality ingredients.
  • Work closely with the Dietitian to address special dietary requirements and develop customized menus for individuals with specific nutritional needs.
  • Lead the culinary team in maintaining strict adherence to health and safety regulations, sanitation standards, and food handling practices.
  • Provide ongoing guidance and support to the culinary team, resolving operational issues, and promoting a positive work environment that cultivates creativity and collaboration.
  • Plan and implement engaging culinary events, cooking demonstrations, and educational workshops to promote healthy eating habits and food exploration.
  • Develop and create innovative and appealing recipes that align with nutritional guidelines, dietary restrictions, and local sourcing goals.
  • Train kitchen staff on new recipes, ensuring proper execution and consistent quality in food preparation and presentation

Preferred Qualifications:

  • A.S. or equivalent experience
  • 5+ years of dynamic culinary/kitchen management experience, depending upon formal degree or training
  • Extensive catering experience a plus
  • High volume, complex food service operations experience - highly desirable
  • Institutional and batch cooking experiences
  • Hands-on chef experience a must
  • Extensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
  • Must be experienced with computers; to include Microsoft Office (Word, Excel and Power Point), Outlook, E-mail and the Internet
  • Must be willing to participate in client satisfaction programs/activities
  • ServSafe certified
