Job Description

Every memorable dining experience at Sheraton Suites Calgary Eau Claire starts behind the scenes with our Culinary team’s commitment to safe, efficient operations and exceptional cuisine. As Executive Sous Chef you will play a pivotal leadership role to ensure our guests and colleagues have exceptional experiences at our hotel.

What you will be doing:

  • Work in partnership with the Executive Chef and Chef de Cuisine to ensure smooth and flawless operation within Flower & Wolf Restaurant & Bar, as well as the Banquet & Stewarding operations.
  • Accountable for managing the day to day operations of the culinary teams with active presence on the floor by leading the team to deliver service excellence, as well as actively communicating with front of house teams as required.
  • Train, lead and coach the culinary team in all aspects of the operation to ensure all standards are met with ongoing performance management, growth and development opportunities.
  • Ensure food quality and safe food handling is maintained at all times, as well as product rotation.
  • Ensure any guest complaints are addressed in a professional manner to the guest with detailed internal follow up.
  • Assist with menu creation & costing, expense & labour management, and product sourcing & ordering.

Qualifications

Your experience and skills include:

  • Red Seal, Journeyperson’s papers or international equivalent is required
  • Previous experience of at least 10 years within culinary field, in progressive roles, including prior leadership/management experience, in similar settings, is required
  • Previous experiences working in restaurants with scratch made items, utilizing local ingredients is required
  • Current SafeCheck Advanced Canadian Food Safety Certification is required
  • Computer literate with knowledge of Microsoft Office, specifically Excel, is required
  • Diploma in the culinary field is an asset
  • Established leadership skills with the ability to motivate and engage with team members to ensure the employee experience is exceptional
  • Proven ability to multi task, prioritize and problem solve effectively
  • Excellent communication, interpersonal skills and fluency in English
  • Ability to work well under pressure in a fast paced environment
  • Demonstrated team work skills, shown through examples of working cohesively as a team with fellow employees across various areas
  • Strong attention to detail
  • Ability to focus attention on guest needs, while remaining calm and courteous at all times
  • Ability to work a variety of shifts and days of the week
