RAC Karri Valley Resort is looking for a Head Chef. RAC Karri Valley Resort is located in the beautiful Southwest region of WA, approximately 3.5 hours’ drive from Perth and 15 minutes from Pemberton. The resort offers a range of accommodation to suit all travellers, including stunning lakeside rooms, forest chalets, and campsites. The resort is located on the edge of Lake Beedelup and surrounded by Karri trees in the Beedelup National Park. Please note staff accommodation is available onsite.
What will you be doing?
- Working with the Restaurant Manager to create industry leading outlets and ensuring a positive and dynamic relationship with the front of house to lead the teams.
- Forecast revenue, manage cost of sales and wages costings within budgetary requirements.
- Developing strategic plans in conjunction with the Restaurant Manager for the outlets.
- Designing food and beverage menus in conjunction with the Restaurant Manager paying special attention to seasonal availability.
- Maintaining and developing relationships with suppliers to meet the needs of the outlets.
- Overseeing the kitchen; preparing, cooking and presenting dishes.
- Ensuring high standards of food hygiene and health and safety standards.
- Estimating the daily production needs and ensuring preparation ready for service.
- Liaising with the Resort Manager on a daily basis providing updates on menus, kitchen operations and all upcoming events.
- Arranging for equipment purchases and repairs.
- Recruiting, training, developing and performance manage the kitchen team and ensuring service standards are met.
- Ensuring communication with the team on strategic plans and ensure the flow of information from the Resort Manager.
- Ensuring rostering is completed to maximise service quality whilst maintain budgetary requirements.
- Assisting with the management of after-hours call outs and phone duties, along with receiving calls from employees and ensuring adequate levels of staffing is maintained.
- Ensuring team are following policies and procedures including occupational health and safety practices.
- Preparing detailed management reports on outlet performance.
- Ensuring all requirements are met under relevant employment legislation.
What are we looking for in you?
- A formal qualification in commercial cookery.
- Previous experience in a restaurant or hotel kitchen.
- Considerable experience in supervision of a team.
- Knowledge of regulatory requirements impacting on kitchen operations.
- Knowledge of and ability to maintain a safe and hygienic working environment
- A thorough understanding of Food Safety principles and Workplace Health & Safety.
- Availability to work weekends and public holidays.
- Ability to obtain a National Police Clearance.
