Responsibilities:

  • Oversee day-to-day kitchen operations for Shang Palace, ensuring food quality, consistency, and hygiene standards.
  • Lead and train the culinary team, fostering skill development and high performance.
  • Support menu planning and creation in alignment with guest preferences and business needs.
  • Monitor food cost, inventory, and waste to optimize kitchen efficiency.
  • Ensure full compliance with food safety (HACCP), health, halal, and hygiene regulations.
  • Work closely with the Executive Chinese Chef and collaborate with other departments for smooth service delivery.
  • Engage with guests and handle feedback to maintain excellent customer satisfaction.

Requirements:

  • Minimum 8 years of culinary experience in high-end hotels or specialty Chinese restaurants.
  • Strong background in authentic Chinese cuisine and culinary techniques.
  • Proven leadership skills with the ability to train, mentor, and motivate a team.
  • Excellent understanding of kitchen operations, food safety standards, and cost control.
  • Fluent in English; additional language skills are a plus.
  • Culinary degree or equivalent professional training preferred.
