About the job

Based at the Mandarin Oriental, Tokyo, the Junior Sous Chef is well equipped to be a leader in the Italian Kitchen. He is responsible to assist the Sous Chef with the daily operational requirements and the smooth running of the kitchen as mandated by the Chef de Cuisine and in order to acquire maximum customer satisfaction and profitability. He should be a passionate leader, with a keen focus on the team growth and wellbeing. The Junior Sous Chef reports to the Sous Chef and to the Chef de Cuisine.

As a Junior Sous Chef, you will be responsible for:

• Leading a section within the Kitchen, from preparation to service.
• Ensure Hygiene and Cleanliness standards are maintained at all times.
• Communicate fluently in English, Japanese language skills are preferred.
• Train and develop your team effectively and timely on all pertinent matters.
• Ensure adherence to all the standards of food handling, production, preparation, portioning and presentation.
• Be involved in Hygiene record keeping, Cost Control, Daily Ordering, R&D.

As a Junior Sous Chef, we expect from you:

• 1-2 years relevant experience in similar capacity
• Self-motivated and responsible
• Independent and able to work under pressure
